Ingredients:
2 ¼ cups all-purpose flour
¼ cup granulated sugar
1 packet (2 ¼ teaspoons) instant yeast
½ teaspoon salt
¾ cup warm water (around 110°F or 45°C)
1 large egg
1 teaspoon vanilla extract
For frying:
Vegetable oil, for frying
For the glaze:
1 ½ cups powdered sugar
3-4 tablespoons water
1 teaspoon vanilla extract (optional)
Instructions:
In a large mixing bowl, combine the warm water and sugar. Sprinkle the yeast over the water mixture and let it sit for about 5-10 minutes until frothy.
Add the egg and vanilla extract to the yeast mixture. Mix well.
Gradually add the flour and salt to the wet ingredients, stirring until a soft and slightly sticky dough forms.
Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1-2 hours or until doubled in size.
Once the dough has risen, heat vegetable oil in a deep skillet or pot to 350°F (175°C).
Using a spoon, scoop portions of the dough and carefully drop them into the hot oil. You can shape them a little with the spoon if necessary, but they don't need to be perfectly round.
Fry the dough portions in batches for about 2-3 minutes on each side until they are golden brown and cooked through.
Once fried, transfer the donuts to a wire rack lined with paper towels to drain excess oil.
To make the glaze, whisk together powdered sugar, water, and vanilla extract (if using) until smooth.
Dip each donut into the glaze, allowing any excess glaze to drip off, then place them back on the wire rack to set.
Serve the fried donuts warm and enjoy!
